Ingredients

  • 1 lb chicken (breast or thighs)
  • 1 cup brown rice
  • 2 cups low-sodium chicken broth
  • 1 cup carrots, chopped
  • 1 cup peas
  • 1 tbsp olive oil
  • Fresh parsley (optional)

Instructions

  1. Start by sautéing the chicken: Set your Instant Pot to the sauté setting and add a tablespoon of olive oil. Once it’s heated, toss in your chicken until it starts to brown.
  2. Add the veggies: After the chicken is golden, mix in the chopped carrots and peas. Sauté for another minute or two.
  3. Combine the rice and broth: Pour in the rinsed brown rice and then add your low-sodium chicken broth.
  4. Seal and cook: Close the lid of the Instant Pot and set it to cook on high pressure for about 10 to 12 minutes.
  5. Natural release: After the cooking time is up, let the pressure naturally release for about 10 minutes.
  6. Fluff and serve: Open the lid, stir everything well, and let it cool a bit before serving.
