Ingredients
- 1 lb chicken (breast or thighs)
- 1 cup brown rice
- 2 cups low-sodium chicken broth
- 1 cup carrots, chopped
- 1 cup peas
- 1 tbsp olive oil
- Fresh parsley (optional)
Instructions
- Start by sautéing the chicken: Set your Instant Pot to the sauté setting and add a tablespoon of olive oil. Once it’s heated, toss in your chicken until it starts to brown.
- Add the veggies: After the chicken is golden, mix in the chopped carrots and peas. Sauté for another minute or two.
- Combine the rice and broth: Pour in the rinsed brown rice and then add your low-sodium chicken broth.
- Seal and cook: Close the lid of the Instant Pot and set it to cook on high pressure for about 10 to 12 minutes.
- Natural release: After the cooking time is up, let the pressure naturally release for about 10 minutes.
- Fluff and serve: Open the lid, stir everything well, and let it cool a bit before serving.
