Ingredients

  • 1 cup unsweetened peanut butter
  • ½ cup pumpkin puree
  • 1 large egg (or flaxseed meal mixed with water for a vegan option)
  • 2 cups rolled oats (gluten-free if needed)
  • 1 tablespoon honey (or maple syrup as a substitute)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the peanut butter, pumpkin puree, and egg in a large bowl until smooth.
  3. Add the rolled oats gradually, mixing with your hands if necessary. Add water if the dough is too dry.
  4. Roll out the dough on a floured surface to about ¼ inch thick.
