Ingredients
- 1 cup Ground Turkey
- 1 cup Quinoa
- 1 cup Carrots, chopped
- 1 cup Peas
- 1 cup Green Beans, chopped
- 2 cups Low-sodium Chicken or Vegetable Broth
- 1 tablespoon Olive Oil
Instructions
- Rinse one cup of quinoa under cold water before boiling it with two cups of water or broth. Bring to a boil, then reduce to a simmer, covering until fluffy—about 15 minutes.
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned and cooked through.
- Toss in your choice of chopped veggies—carrots, peas, and green beans. Cook for another 5 minutes until tender.
- Add the cooked quinoa to the skillet with the turkey and veggies. Mix thoroughly to combine, adding more broth if needed.
- Let it cool before serving. Rufus won’t be able to resist!
Notes
Avoid using onions, garlic or harmful spices. Use fresh ingredients for best results.
