Ingredients
- 1-2 cups Sweet Potatoes
- 2 cups Rolled Oats
- 2 Eggs
- 1/4 cup Coconut Oil
- 1/4 cup Peanut Butter
- 1 teaspoon Baking Powder
- Optional: Cinnamon, Applesauce
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and cube the sweet potatoes, then boil them until soft, about 15-20 minutes.
- Drain and mash the sweet potatoes until smooth.
- Mix the mashed sweet potatoes with rolled oats and eggs in a large bowl.
- Stir in coconut oil and peanut butter until well combined.
- Add baking powder and any optional spices.
- Pour the mixture into a greased 9-inch round cake pan.
- Bake for 25 to 30 minutes or until a toothpick comes out clean.
- Allow to cool completely before slicing.
Notes
You can frost with yogurt and peanut butter for an extra special treat! Ensure no harmful ingredients are added.
