Ingredients

  • 1-2 cups Sweet Potatoes
  • 2 cups Rolled Oats
  • 2 Eggs
  • 1/4 cup Coconut Oil
  • 1/4 cup Peanut Butter
  • 1 teaspoon Baking Powder
  • Optional: Cinnamon, Applesauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil them until soft, about 15-20 minutes.
  3. Drain and mash the sweet potatoes until smooth.
  4. Mix the mashed sweet potatoes with rolled oats and eggs in a large bowl.
  5. Stir in coconut oil and peanut butter until well combined.
  6. Add baking powder and any optional spices.
  7. Pour the mixture into a greased 9-inch round cake pan.
  8. Bake for 25 to 30 minutes or until a toothpick comes out clean.
  9. Allow to cool completely before slicing.
