- 2 cups Sweet Potatoes, boiled or baked until tender
- 1 1/2 cups Rolled Oats
- 2 Eggs
- 1/2 cup Unsweetened Peanut Butter
- 1/2 cup Applesauce (or pumpkin puree)
- 1 tsp Cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment.
- Prepare the sweet potatoes by peeling and chopping them, then boil or bake until tender, then mash.
- Mix the dry ingredients in a bowl, combining rolled oats and cinnamon.
- Combine wet ingredients in a separate bowl, whisking together mashed sweet potatoes, eggs, peanut butter, and applesauce until smooth.
- Incorporate the dry ingredients into the wet mixture, stirring until well combined.
- Bake for 25-30 minutes, until a toothpick inserted comes out clean.
- Cool completely before serving, optionally topping with more peanut butter.
