Ingredients
- 2 Sweet Potatoes
- 1/2 cup Ground Flax Seeds
- 1 cup Whole Wheat Flour (or almond/oat flour)
- 2 Eggs (or 1 mashed banana for vegan)
- 1/4 cup Coconut Oil (or olive oil)
- 1 tsp Cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cook the sweet potatoes: Boil or bake until soft.
- Mash the sweet potatoes until smooth in a large mixing bowl.
- Mix in the flax seeds, flour, eggs, and melted coconut oil until a soft dough forms.
- Roll out the dough to about ¼ inch thickness on a lightly floured surface.
- Cut out treats using cookie cutters or cut into squares.
- Bake for 30 minutes until golden and firm. Cool on a wire rack.
Notes
Store treats in an airtight container for up to a week or refrigerate for extended freshness. Freeze for up to three months.
