- 2 cups fresh or canned salmon
- 1 cup sweet potatoes, peeled and diced
- 1/2 cup green peas
- 1/4 cup fresh herbs (parsley or basil)
- 1 tablespoon olive oil
Instructions
- Prepare the ingredients: Start by peeling and dicing the sweet potatoes.
- Cook the sweet potatoes: In a large pot, bring water to a boil, adding the diced sweet potatoes. Cook for about 15 minutes or until fork-tender.
- Sauté the salmon: If you’re using fresh salmon, heat a skillet over medium heat with a bit of olive oil. Place skin-side down and cook for about 5-7 minutes.
- Combine everything: In a large mixing bowl, combine the cooked sweet potatoes, minced fresh herbs, and salmon.
- Add peas and toss: Fold in the green peas gently.
