- 1 cup brown rice
- 2 cups water or low-sodium chicken broth
- 1 tablespoon olive oil
- 1 pound fresh or frozen skinless salmon fillets
- 1 cup chopped carrots
- 1 cup peas
- Fresh parsley or spinach (optional)
Instructions
- Prepare the ingredients: Rinse 1 cup of brown rice and set aside. Thaw frozen salmon if using.
- Cook the rice: In a pot, combine 2 cups of water or broth with the rinsed brown rice. Bring to a boil, then simmer and cover for 40-45 minutes.
- Cook the salmon: Heat olive oil in a skillet over medium heat. Cook salmon for 4-5 minutes on each side until fully cooked and flaky.
- Add vegetables: In the last few minutes of cooking, add carrots and peas, allowing them to soften slightly.
- Mix and serve: Shred the salmon into pieces and combine with rice and veggies. Let it cool before serving.
- Optional: Sprinkle with fresh herbs before serving.
