Ingredients

  • 1 cup brown rice
  • 2 cups water or low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 pound fresh or frozen skinless salmon fillets
  • 1 cup chopped carrots
  • 1 cup peas
  • Fresh parsley or spinach (optional)

Instructions

  1. Prepare the ingredients: Rinse 1 cup of brown rice and set aside. Thaw frozen salmon if using.
