Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- ¾ cup feta cheese, crumbled
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano (or 1 tablespoon fresh)
Instructions
- Preheat your oven to 375°F (190°C).
- Lay the chicken breasts flat on a cutting board. Use a meat mallet to pound them down to an even thickness.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute before adding chopped spinach. Cook until wilted and season with salt, pepper, and oregano.
- Spread the spinach mixture evenly onto the chicken breasts, followed by crumbled feta cheese.
- Roll each breast tightly, starting from the thicker end, securing it with kitchen twine or toothpicks.
- In the same skillet, heat remaining olive oil over medium-high. Sear the chicken rolls on all sides until golden brown, about 5 minutes.
- Transfer to a baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Allow the chicken to rest for 5-10 minutes before slicing.
