Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • ¾ cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay the chicken breasts flat on a cutting board. Use a meat mallet to pound them down to an even thickness.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute before adding chopped spinach. Cook until wilted and season with salt, pepper, and oregano.
  4. Spread the spinach mixture evenly onto the chicken breasts, followed by crumbled feta cheese.
  5. Roll each breast tightly, starting from the thicker end, securing it with kitchen twine or toothpicks.
  6. In the same skillet, heat remaining olive oil over medium-high. Sear the chicken rolls on all sides until golden brown, about 5 minutes.
  7. Transfer to a baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Allow the chicken to rest for 5-10 minutes before slicing.
