Instructions
- Prepare your ingredients: Gather your pumpkin puree, flour, eggs, baking powder, and cinnamon.
- Mix the dry ingredients: In a large bowl, whisk together the whole-grain flour, baking powder, and cinnamon.
- Combine eggs and pumpkin: In a separate bowl, beat the eggs and then incorporate the pumpkin puree. If you’re adding peanut butter, mix it in at this point.
- Combine wet and dry: Gradually mix the dry ingredients into the pumpkin mixture, adding milk or water until you achieve a pourable yet thick batter.
- Heat the skillet: Preheat a non-stick skillet over medium heat and lightly grease it with coconut oil or a dash of butter.
- Cook the pancakes: Pour a small amount of batter onto the skillet, cook until bubbles form, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- Serve and enjoy: Allow the pancakes to cool before serving them to your furry friend.
