Delicious and nutritious pumpkin pancakes made especially for your furry friends.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

  • 1 cup pumpkin puree (fresh or canned)
  • 1 cup whole-grain flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup milk or water (unsweetened)
  • 1/4 cup peanut butter (optional, xylitol-free)

Instructions

  1. Prepare your ingredients: Gather your pumpkin puree, flour, eggs, baking powder, and cinnamon.
  2. Mix the dry ingredients: In a large bowl, whisk together the whole-grain flour, baking powder, and cinnamon.
  3. Combine eggs and pumpkin: In a separate bowl, beat the eggs and then incorporate the pumpkin puree. If you’re adding peanut butter, mix it in at this point.
  4. Combine wet and dry: Gradually mix the dry ingredients into the pumpkin mixture, adding milk or water until you achieve a pourable yet thick batter.
  5. Heat the skillet: Preheat a non-stick skillet over medium heat and lightly grease it with coconut oil or a dash of butter.
  6. Cook the pancakes: Pour a small amount of batter onto the skillet, cook until bubbles form, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  7. Serve and enjoy: Allow the pancakes to cool before serving them to your furry friend.

Notes

Pancakes can be served plain or with a drizzle of yogurt or peanut butter for a special treat. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2-3 months.
