Ingredients

  • 1 cup pumpkin puree (plain)
  • 1 cup natural peanut butter (no added sugars or xylitol)
  • 2½ cups quick oats
  • 2 tablespoons honey or unsweetened applesauce (optional)
  • ½ cup coconut flour (or regular flour/oat flour)

Instructions

  1. Combine the ingredients in a mixing bowl: 1 cup of pumpkin puree, 1 cup of peanut butter, and 2½ cups of oats. Use a spatula or your hands to mix until well combined.
  2. Add honey or applesauce, if using, for sweetness.
  3. Check the consistency: The mixture should be thick but pliable. Adjust with water or more peanut butter if too dry, or add more oats or coconut flour if too wet.
  4. Shape the treats by rolling them into small balls or pressing them into a lined baking tray.
  5. Chill in the refrigerator for at least an hour, then cut into squares if pressed into a tray.
  6. Store any leftovers in an airtight container in the fridge for up to a week or freeze for longer storage.

Notes
