Instructions
- Preheat your oven to 350°F (175°C).
- Combine pumpkin puree, peanut butter, and egg in a mixing bowl, whisking until smooth.
- Gradually add whole wheat flour, cinnamon, and ginger, mixing until a dough forms.
- Roll out the dough to about ½ inch thick on a floured surface.
- Cut shapes using cookie cutters and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden and firm.
- Allow to cool completely before serving.
Notes
Substitutions include using mashed banana instead of egg and sunflower seed butter instead of peanut butter.
