Instructions
- Prepare the pumpkin: Peel and chop pumpkin into small cubes.
- Cook the pumpkin: In a pot, add water and bring the pumpkin to a gentle boil. Cook until tender, about 15-20 minutes.
- Blend everything together: Drain the pumpkin and blend with ripe bananas, coconut milk, and sweetener until smooth.
- Add optional spices: Blend again if using spices, adjusting to taste.
- Freeze the mixture: Pour into ice cube trays and freeze for several hours until solid.
- Store and enjoy: Pop cubes from trays and store in a labeled freezer bag or container.
