Ingredients
- 4 medium-sized Idaho Russet potatoes
- 1 cup shredded sharp cheddar cheese
- 1 egg, beaten
- 2 cloves of minced garlic
- 1 tablespoon fresh chopped parsley
- 1/2 cup flour
- Salt and pepper to taste
Instructions
- Boil the potatoes until fork-tender, about 15-20 minutes. Drain and let cool, then peel and mash until smooth.
- In a large bowl, mix the mashed potatoes, cheddar cheese, beaten egg, minced garlic, chopped parsley, flour, and season with salt and pepper.
- Shape the mixture into sticks or patties, about 3 inches long and 1 inch thick.
- If desired, dip each stick in breadcrumbs for extra crunch.
- Heat oil in a skillet over medium heat and add the sticks, cooking for 3-4 minutes on each side until golden brown. Alternatively, bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
- Garnish with parsley and serve with your favorite dipping sauce.
