Ingredients
- 1 cup peanut butter
- 1 cup pumpkin puree
- ½ cup brown sugar (or sweetener of choice)
- 1 tsp vanilla extract
- 2 cups rolled oats
- 1 tsp baking soda
- Spices (ground cinnamon, nutmeg, or others)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine 1 cup of peanut butter and 1 cup of pumpkin puree until smoothly blended.
- Mix in ½ cup of brown sugar (or sweetener of choice) and 1 tsp of vanilla extract.
- Combine 2 cups of rolled oats with 1 tsp of baking soda and your spices in another bowl.
- Stir the dry ingredients into the wet mixture until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each.
- Bake for 12-15 minutes, until the edges look golden.
- Cool the treats on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Consider adding toasted nuts for some crunch. Use pure pumpkin puree, not pie filling.
