Delicious soft treats combining peanut butter and pumpkin for a nostalgic fall flavor.

Ingredients

  • 1 cup peanut butter
  • 1 cup pumpkin puree
  • ½ cup brown sugar (or sweetener of choice)
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 1 tsp baking soda
  • Spices (ground cinnamon, nutmeg, or others)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine 1 cup of peanut butter and 1 cup of pumpkin puree until smoothly blended.
  3. Mix in ½ cup of brown sugar (or sweetener of choice) and 1 tsp of vanilla extract.
  4. Combine 2 cups of rolled oats with 1 tsp of baking soda and your spices in another bowl.
  5. Stir the dry ingredients into the wet mixture until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each.
  7. Bake for 12-15 minutes, until the edges look golden.
  8. Cool the treats on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Consider adding toasted nuts for some crunch. Use pure pumpkin puree, not pie filling.
