Ingredients

  • 1 cup all-natural peanut butter
  • 1/2 cup grated carrots
  • 2 cups whole wheat flour (or gluten-free flour)
  • 1 cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the peanut butter and grated carrots in a large bowl, mixing until well combined.
  3. Add the whole wheat flour and rolled oats, mixing until the dough comes together. Adjust consistency with water or more peanut butter as needed.
  4. Crack the egg into the mixture and stir thoroughly, ensuring no dry bits remain.
  5. Transfer the dough onto a lightly floured surface and roll it out to a thickness of about 1/2 inch.
  6. Cut out shapes with cookie cutters or slice into squares or rectangles.
  7. Place the treats on the lined baking sheet and bake for 20-25 minutes or until golden brown.
  8. Allow the treats to cool completely on a wire rack before serving.
