Ingredients

  • 2 cups Whole Wheat Flour (or oat/almond flour)
  • 1/2 cup Fresh Parsley, finely chopped
  • 1/2 cup Fresh Mint, finely chopped
  • 2 Eggs (or unsweetened applesauce)
  • 1/4 cup Olive Oil (or coconut oil)
  • 1/4 cup Water (adjust as needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the whole wheat flour, parsley, and mint in a large bowl.
  3. Combine the eggs and olive oil in a separate bowl, then stir in enough water to create a smooth mixture.
  4. Gradually add the wet ingredients to the dry ingredients and stir until a dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Use cookie cutters to cut out fun shapes.
  7. Bake for 25-30 minutes until lightly golden.
