Ingredients
- 1 cup all-purpose flour (or whole wheat/gluten-free)
- 1 tbsp baking powder
- 2 tbsp sugar (or coconut sugar/honey)
- 1/2 tsp salt
- 1 cup milk (whole, almond, or oat)
- 1 large egg (or flax egg)
- 2 tbsp butter (or coconut oil)
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, mix the milk, egg, and melted butter.
- Gradually add the wet ingredients to the dry, stirring until just combined.
- Preheat a skillet over medium heat and grease it lightly.
- Drop tablespoon-sized amounts of batter onto the skillet, leaving space between each.
- Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
- Serve warm with maple syrup or desired toppings.
Notes
Avoid overmixing for light and fluffy poppers. Experiment with toppings and fillings for variety.
