Ingredients
- 1 pound chicken liver, fresh or frozen
- 2 tablespoons olive oil or coconut oil
- 1 clove fresh garlic, chopped
- 1/4 cup fresh herbs (parsley or basil)
- 1/2 cup low-sodium vegetable broth
Instructions
- Prepare the ingredients: Rinse the chicken livers under cold water and trim any excess fat or membranes.
- Heat the olive oil in a skillet over medium heat. Once shimmering, add chicken livers and chopped garlic. Sauté for about 4-5 minutes.
- Let the livers cool slightly, then place them in a food processor with fresh herbs and vegetable broth. Blend until smooth, adjusting with more broth if needed.
- Taste test for flavor and adjust if necessary.
- Portion the pâté into airtight containers. Store in the fridge for a week or freeze in small portions.
Notes
Be cautious not to overcook the liver; it should be tender and flavorful. Always check herbs for safety before using.
