- 1 pound ground lamb
- 2 medium sweet potatoes, peeled and diced

Instructions
- Prep your ingredients: Start by peeling and dicing the sweet potatoes into small cubes. Dice the carrots and measure out the peas.
- Cook the lamb: In a large skillet over medium heat, add the ground lamb. Cook until it’s browned all the way through, breaking it up as it cooks. This should take about 5-7 minutes.
- Add the veggies: Toss in the sweet potatoes, carrots, and peas into the skillet. Stir everything around, allowing them to mingle and absorb the flavor of the lamb.
- Simmer: Pour in a bit of water or low-sodium broth to help steam the veggies a bit, cover, and let it simmer for about 10 minutes.
- Finish up: Unearth the blend, stirring in a drizzle of olive oil and the fresh herbs. Let everything cool before serving.
