- 1 lb lamb (cubed)
- 1 cup lentils (green or brown)
- 1 cup carrots (diced)
- 1 cup green peas (frozen or fresh)
- 1 cup sweet potato (cubed)
- 1 tablespoon olive oil
- Fresh herbs (like thyme or parsley)
Instructions
- Prepare the ingredients: Wash and chop the vegetables into bite-sized pieces.
- Sauté the lamb: In a large pot, heat the olive oil over medium heat. Add the cubed lamb and cook until browned on all sides.
- Add the veggies: Toss in the diced carrots, sweet potatoes, and peas. Sauté together for about 5-7 minutes.
- Toss in the lentils: Rinse your lentils and add them to the pot, stirring well.
- Simmer to perfection: Pour in enough water (or low-sodium broth) to cover the ingredients by about an inch. Bring to a boil, reduce heat to low, cover, and simmer for 30-35 minutes.
- Check for doneness: Once the lentils and veggies are soft, remove the pot from heat. Let it cool before serving.
- Garnish and serve: Sprinkle fresh herbs right before serving.
