Ingredients

  • 1 lb lamb (cubed)
  • 1 cup lentils (green or brown)
  • 1 cup carrots (diced)

  • Fresh herbs (like thyme or parsley)

Instructions

  1. Prepare the ingredients: Wash and chop the vegetables into bite-sized pieces.
  2. Sauté the lamb: In a large pot, heat the olive oil over medium heat. Add the cubed lamb and cook until browned on all sides.
  3. Add the veggies: Toss in the diced carrots, sweet potatoes, and peas. Sauté together for about 5-7 minutes.
  4. Toss in the lentils: Rinse your lentils and add them to the pot, stirring well.
