Ingredients
- 1 pound ground beef
- 1 cup rolled oats
- 1 cup carrots, chopped
- 1 cup peas
- 2 cups low sodium beef broth
- 1 tablespoon olive oil
- ¼ cup parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and sauté until browned, about 5-7 minutes.
- Add chopped vegetables (carrots and peas) and sauté for 3-4 minutes until softened.
- Stir in rolled oats and beef broth, then bring to a simmer. Allow to cook for about 10 minutes.
- Stir occasionally to prevent sticking and achieve a chunky consistency.
- Sprinkle in chopped parsley and remove from heat. Let cool before serving.
