Ingredients

  • 1 cup Pumpkin Puree
  • 1/2 cup Unsweetened Applesauce
  • 1/2 cup Peanut Butter (xylitol-free)
  • 1 Egg (or flaxseed meal mixture)
  • 2 cups Whole Wheat Flour (or gluten-free alternative)
  • 1 tsp Cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the pumpkin puree and applesauce in a large bowl. Stir in the peanut butter until well blended.
  3. Add the egg (or flax mixture) and blend until smooth.
  4. Combine the whole wheat flour and cinnamon in another bowl, gradually adding to the wet mixture until a dough forms.
  5. Shape the dough into small balls or flatten with cookie cutters.
  6. Bake on a parchment-lined baking sheet for 20-25 minutes or until slightly browned.
  7. Cool completely before serving.
