Ingredients

  • 1 cup sweet potatoes, cooked and mashed
  • 1/2 cup natural peanut butter (no added sugars or xylitol)
  • 1 cup whole wheat flour (or oat flour for gluten-free)
  • 1/2 cup rolled oats
  • 1 egg
  • 1/4 cup flaxseeds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the sweet potatoes until soft, then mash in a bowl till smooth.
  3. Mix sweet potatoes, peanut butter, and the egg in a large bowl.
  4. Add flour and oats gradually, mixing until a sticky dough forms.
  5. Shape the dough on a floured surface to about half-inch thick and cut into desired shapes.
  6. Bake on a parchment-lined sheet for 25-30 minutes until golden brown.
  7. Cool treats completely before serving and store in an airtight container.

Notes

These treats can be frozen for up to three months. Use pumpkin puree or nut flour as substitutions if desired.
