Ingredients
- 2 cups almond flour (or chickpea flour)
- 1/2 cup pumpkin puree
- 1 egg (or flaxseed egg)
- 1/2 cup finely shredded carrots
- 1 tablespoon ground flaxseed (if using flaxseed egg)
- 1 tablespoon water (if using flaxseed egg)
- Parsley (fresh or dried)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the dry ingredients in a large mixing bowl.
- Add the wet ingredients in another bowl and whisk together.
- Combine the wet ingredients into the dry mixture and stir until a dough forms.
- Roll out the dough on a lightly floured surface and cut into shapes.
- Bake on a parchment-lined baking sheet for 20-25 minutes until golden brown.
- Cool completely before serving or storing in an airtight container.
Notes
Avoid overmixing to keep the biscuits tender. Allow to cool completely to avoid softness during storage.
