Ingredients
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup crushed graham crackers
- ¼ cup unsalted butter, melted
- 2 tablespoons sugar for the crust
Instructions
- Preheat your oven to 325°F (160°C).
- Mix crushed graham crackers, melted butter, and sugar until it resembles wet sand. Press into the bottom of muffin tin cups.
- Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
- Spoon the cheesecake mixture over the crust in the muffin tin, filling each cup about three-quarters full.
- Bake for 18-20 minutes until edges are set but centers still jiggle slightly.
- Cool in the pan for 10 minutes, then transfer to a wire rack. Chill in the refrigerator for at least 2 hours before serving.
Notes
Try adding lemon zest or swirls of pureed fruit for different flavor variations. Always serve chilled for best texture.
