Ingredients

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup crushed graham crackers
  • ¼ cup unsalted butter, melted
  • 2 tablespoons sugar for the crust

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix crushed graham crackers, melted butter, and sugar until it resembles wet sand. Press into the bottom of muffin tin cups.
  3. Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
  4. Spoon the cheesecake mixture over the crust in the muffin tin, filling each cup about three-quarters full.
  5. Bake for 18-20 minutes until edges are set but centers still jiggle slightly.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack. Chill in the refrigerator for at least 2 hours before serving.

Notes

Try adding lemon zest or swirls of pureed fruit for different flavor variations. Always serve chilled for best texture.
