Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 cup chicken broth
  • 2 cups whole wheat flour (or oat flour)
  • 1 egg
  • 2 tablespoons fresh herbs (parsley and basil)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium pot, bring the chicken and enough chicken broth to cover it to a simmer. Cook until the chicken is no longer pink (about 15-20 minutes).
  3. Once cooled, shred the chicken into small pieces.
  4. In a large mixing bowl, blend shredded chicken, whole wheat flour, one egg, and finely chopped fresh herbs. If the mixture feels too dry, add more chicken broth.
  5. Roll out the dough on a floured surface and cut out shapes using cookie cutters.
  6. Arrange the treats on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
