  • 1 lb boneless lamb shoulder or stew meat
  • 1 cup green or brown lentils
  • 2 carrots, diced

  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 4 cups low-sodium vegetable or beef broth

Instructions

  1. Sauté the aromatics: In a large pot, heat a splash of oil over medium heat. Add minced garlic, diced onions, and your chosen herbs. Cook until fragrant.
  2. Brown the lamb: Add cubed lamb to the pot. Allow it to brown on all sides.
  3. Add vegetables and broth: Toss in diced carrots, celery, and potatoes. Pour in the broth and bring everything to a simmer.
  4. Stir in lentils: Once simmering, add rinsed lentils.
  5. Simmer to perfection: Reduce heat to low and cover. Let it simmer for about 60 minutes or until the lentils and lamb are tender.
