Ingredients
- 1 lb Lean Ground Meat (Beef, Chicken, or Turkey)
- 2 cups Mixed Vegetables (Carrots, Sweet Peas, Zucchini)
- 1 cup Sweet Potatoes or Brown Rice
- 1 cup Low-Sodium Broth
- Fresh Herbs (Parsley or Basil)
Instructions
- In a large skillet, brown the lean ground meat over medium heat until fully cooked. Drain any excess fat.
- Add in your vegetables of choice. Sauté for about 5-7 minutes until they soften, stirring regularly to combine them with the meat.
- Pour in about 1 cup of low-sodium broth, stirring well to incorporate.
- If you’re using rice or sweet potatoes, fold them in at this stage. Let everything simmer on low for another 10-15 minutes.
- Once cooked through, allow this delightful mixture to cool completely. Portion it into meal-sized servings and store in the fridge or freezer.
Notes
Optional: Serve with a small dollop of plain yogurt or sprinkle of cheese on top.
