- 2 cups almond flour
- 1 cup rolled oats
- 1 teaspoon cinnamon
- 1/2 cup unsweetened peanut butter
- 1/2 cup pumpkin puree
- 2 eggs (or flaxseed mixture for vegan option)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix dry ingredients: In a large bowl, combine almond flour, rolled oats, and cinnamon.
- Blend wet ingredients: In another bowl, whisk together peanut butter, pumpkin puree, and eggs until smooth.
- Combine the dry ingredients with the wet mixture, stirring until a thick dough forms.
- Shape the dough into a rectangle, about 1/2 inch thick, on a floured surface.
- Bake for about 25 minutes until slightly golden.
- Slice the biscotti into strips about one inch wide and lay them cut side down back onto the baking sheet.
- Bake again for another 15–20 minutes, flipping halfway through.
- Cool on a wire rack to harden.
