Ingredients

  • 2 cups almond flour
  • 1 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/2 cup unsweetened peanut butter
  • 1/2 cup pumpkin puree
  • 2 eggs (or flaxseed mixture for vegan option)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine almond flour, rolled oats, and cinnamon.
  3. Blend wet ingredients: In another bowl, whisk together peanut butter, pumpkin puree, and eggs until smooth.
  4. Combine the dry ingredients with the wet mixture, stirring until a thick dough forms.
  5. Shape the dough into a rectangle, about 1/2 inch thick, on a floured surface.
  6. Bake for about 25 minutes until slightly golden.
  7. Slice the biscotti into strips about one inch wide and lay them cut side down back onto the baking sheet.
  8. Bake again for another 15–20 minutes, flipping halfway through.
  9. Cool on a wire rack to harden.
