Ingredients
- 1 cup chicken (breast or thighs), diced
- 1 cup fresh spinach, chopped
- 1 cup brown rice
- 1/2 cup carrots, finely chopped or shredded
- 1/4 cup pure pumpkin (optional)
Instructions
- Cook the brown rice according to package instructions and set aside.
- Sauté the diced chicken in a large skillet over medium heat until fully cooked, about 5-7 minutes.
- Add the finely chopped carrots to the skillet and soften for about 2-3 minutes.
- Toss in the fresh spinach and stir gently for 1-2 minutes until it wilts.
- Mix in the cooked brown rice until thoroughly combined.
- Allow to cool to room temperature before serving.
Notes
Store leftovers in airtight containers in the fridge for up to three days or freeze in individual portions for longer storage.
