A family-favorite recipe combining juicy chicken and hearty oats, seasoned with fresh herbs for a delightful treat.

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb chicken (breast or thighs), boneless
  • 2 cups rolled oats
  • 1/2 cup fresh herbs (parsley, thyme, or cilantro)
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 egg, beaten
  • Salt and pepper to taste
  • Optional: paprika or allspice for seasoning

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the ingredients: Chop your chicken into bite-sized pieces, mince the garlic, and dice the onion.
  3. Mix everything together in a large mixing bowl: combine chicken, oats, garlic, onion, chopped herbs, egg, salt, and pepper.
  4. Form the mixture into small patties or balls, about the size of a golf ball, and place them on the prepared baking sheet.
  5. Bake for 20-25 minutes or until golden brown and cooked through.
  6. Serve and enjoy, let cool slightly before serving.

Notes

You can substitute turkey for chicken or use quinoa for a gluten-free option. Keep an eye on baking times and avoid overcrowding the baking sheet.
