Ingredients

  • 1 lb Chicken (breast or thighs), boneless
  • 2 cups Broccoli, chopped
  • 2 tbsp Olive oil
  • 1 cup Chicken or vegetable broth
  • Optional add-ins: Carrots or peas
  • 1 tsp Parsley, for garnish

Instructions

  1. Start by dicing the chicken into bite-sized pieces. Heat a skillet over medium heat and add the olive oil.
  2. Once the oil is heated, toss in the chicken pieces. Cook until they turn golden brown and are fully cooked through, anywhere from 6 to 8 minutes.
  3. While the chicken is cooking, chop the broccoli into small florets. If using carrots or peas, prepare them as well.
  4. Once the chicken is finished, remove it from the pan and set aside. In the same skillet, add the broccoli and any additional vegetables. Stir for about 3 to 5 minutes until they soften slightly.
  5. Pour a bit of chicken broth over the vegetables and let them simmer for a couple of minutes.
  6. Finally, mix the chicken back in and stir to combine. Allow everything to cool before serving to your pet.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. This dish freezes well for up to three months.
