Ingredients
- 2 cups plain full-fat Greek yogurt
- 1 cup fresh blueberries (or frozen, thawed)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
Instructions
- Prepare your ingredients: Gather all your ingredients. If using frozen blueberries, let them thaw and drain for about 30 minutes.
- Mix your base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth and creamy.
- Make the blueberry swirl: In another bowl, add the blueberries and a dash of lemon juice. Mash them lightly with a fork to create a chunky puree.
- Combine: Gently fold the blueberry mixture into the yogurt. Swirl it without mixing too thoroughly—you want beautiful marbled bites, not a solid color.
- Mold them: Pour the mixture into silicone molds—or any ice cube tray will do! Leave a little space at the top, as they will expand slightly when frozen.
- Freeze: Place the molds in your freezer for at least 240 minutes or until completely set.
- Unmold and enjoy: Once frozen, pop out your Blueberry Swirl Yogurt Bites and enjoy them as is or store them in a sealed container in the freezer for up to a month!
Notes
For an even creamier texture, let the bites thaw for a few minutes before serving. They’re also delightful mixed with a sprinkle of granola for a crunchy contrast.
