Ingredients

  • 2 cups plain full-fat Greek yogurt
  • 1 cup fresh blueberries (or frozen, thawed)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Prepare your ingredients: Gather all your ingredients. If using frozen blueberries, let them thaw and drain for about 30 minutes.
  2. Mix your base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth and creamy.
  3. Make the blueberry swirl: In another bowl, add the blueberries and a dash of lemon juice. Mash them lightly with a fork to create a chunky puree.
  4. Combine: Gently fold the blueberry mixture into the yogurt. Swirl it without mixing too thoroughly—you want beautiful marbled bites, not a solid color.
  5. Mold them: Pour the mixture into silicone molds—or any ice cube tray will do! Leave a little space at the top, as they will expand slightly when frozen.
  6. Freeze: Place the molds in your freezer for at least 240 minutes or until completely set.
