- 1 cup fresh blueberries
- 1 cup pumpkin puree
- 1 large egg
- 1/2 cup unsweetened peanut butter
- 1 1/2 cups whole wheat flour
- 1/2 cup rolled oats
Instructions
- Preheat your oven to 350°F (175°C). Line a donut pan with parchment paper or lightly grease it with coconut oil.
- Combine the pumpkin puree, egg, and peanut butter in a large mixing bowl. Mix until smooth and creamy.
- Add the whole wheat flour and oats gradually, stirring until evenly combined.
- Fold in the fresh blueberries gently.
- Spoon the mixture into the donut molds, filling each about three-quarters full.
- Bake for about 15-20 minutes or until a toothpick inserted comes out clean. Let cool before removing from the pan.
- Consider drizzling a peanut butter frosting over the cooled donuts for an extra treat.
