Ingredients

  • 1 lb ground beef
  • 1 cup pureed pumpkin
  • 1 egg
  • 1/2 cup flour (whole wheat or oat flour)
  • 1/4 cup fresh parsley or basil, finely chopped
  • 1 clove fresh garlic, minced (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix ground beef, pureed pumpkin, egg, and flour in a large mixing bowl.
  3. Add finely chopped herbs and garlic, and fold them into the mixture.
  4. Form mixture into bite-sized meatballs, about an inch in diameter.
