Ingredients

  • 2 medium sweet potatoes, cooked and mashed
  • 1 cup unsalted peanut butter (free of xylitol)
  • 1 1/2 cups whole wheat flour (or oat/coconut flour for gluten-free)
  • 1 large egg (or flaxseed egg for vegan option)
  • Water as needed
  • Optional: sprinkle of cinnamon, diced carrots or apples for added flavor

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the sweet potatoes by washing and piercing them, then bake until tender (about 45 minutes) or use steaming/microwaving methods.
  3. In a mixing bowl, combine the mashed sweet potatoes, peanut butter, and egg until smooth.
  4. Slowly incorporate the flour until a workable dough forms; add water if too dry or more flour if too wet.
  5. Roll out the dough to about 1/4-inch thickness.
  6. Cut out treats using cookie cutters or a knife.
  7. Place on a parchment-lined baking sheet and bake for 25-30 minutes until golden and firm.
