Ingredients

  • 4 cups ripe watermelon, diced
  • 2 cups full-fat Greek yogurt (or non-dairy yogurt)
  • 2 tablespoons honey or maple syrup
  • 1 cup granola or oats
  • A sprinkle of salt
  • A pinch of cinnamon (optional)

Instructions

  1. Prepare the watermelon by cutting it into small cubes and removing any seeds. Place in a bowl and set aside to drain excess moisture.
  2. Mix the yogurt with honey or maple syrup in another bowl, adding salt and cinnamon if desired. Mix until well combined.
  3. Incorporate the diced watermelon gently into the yogurt mixture, ensuring the pieces remain intact.
  4. Prepare a baking sheet lined with parchment paper and drop tablespoon-sized dollops of the mixture onto it, leaving space in between.
  5. Add the crunch by sprinkling granola or oats over each dollop, and add crushed nuts if desired.
  6. Freeze for 2-3 hours or until completely firm.
  7. Serve immediately or store in an airtight container in the freezer for later enjoyment.
