- 4 cups ripe watermelon, diced
- 2 cups full-fat Greek yogurt (or non-dairy yogurt)
- 2 tablespoons honey or maple syrup
- 1 cup granola or oats
- A sprinkle of salt
- A pinch of cinnamon (optional)
Instructions
- Prepare the watermelon by cutting it into small cubes and removing any seeds. Place in a bowl and set aside to drain excess moisture.
- Mix the yogurt with honey or maple syrup in another bowl, adding salt and cinnamon if desired. Mix until well combined.
- Incorporate the diced watermelon gently into the yogurt mixture, ensuring the pieces remain intact.
- Prepare a baking sheet lined with parchment paper and drop tablespoon-sized dollops of the mixture onto it, leaving space in between.
- Add the crunch by sprinkling granola or oats over each dollop, and add crushed nuts if desired.
- Freeze for 2-3 hours or until completely firm.
- Serve immediately or store in an airtight container in the freezer for later enjoyment.
Notes
Allow watermelon to drain to prevent sogginess. Use high-quality yogurt for best flavor.
