Ingredients

  • 2 slices thick-cut bread (sourdough or whole grain)
  • 2 slices aged cheddar cheese (or fontina, Gruyère)
  • 2 large eggs
  • 2 slices thick-cut bacon (or turkey bacon)
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh herbs (chives or green onions) for garnish

Instructions

  1. In a large skillet over medium heat, cook bacon strips until crispy, about 6-8 minutes. Remove and drain on paper towels, saving 1 tablespoon of bacon grease in the skillet.
  2. Whisk eggs with a pinch of salt and pepper, lower heat, and add butter to the skillet. Pour in the eggs and gently stir, cooking until softly scrambled, about 3-4 minutes.
  3. Spread butter on the outside of two bread slices. Place one slice, butter-side down, in the skillet and layer with cheese, scrambled eggs, and bacon. Top with another slice of cheese and the second piece of bread, butter-side up.
  4. Grill for 3-4 minutes on each side until golden brown, pressing down gently to compact ingredients.
  5. Remove from skillet, slice in half, and let cheese melt before serving. Enjoy with fresh fruit or a side salad.
