Ingredients
- 2 slices thick-cut bread (sourdough or whole grain)
- 2 slices aged cheddar cheese (or fontina, Gruyère)
- 2 large eggs
- 2 slices thick-cut bacon (or turkey bacon)
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh herbs (chives or green onions) for garnish
Instructions
- In a large skillet over medium heat, cook bacon strips until crispy, about 6-8 minutes. Remove and drain on paper towels, saving 1 tablespoon of bacon grease in the skillet.
- Whisk eggs with a pinch of salt and pepper, lower heat, and add butter to the skillet. Pour in the eggs and gently stir, cooking until softly scrambled, about 3-4 minutes.
- Spread butter on the outside of two bread slices. Place one slice, butter-side down, in the skillet and layer with cheese, scrambled eggs, and bacon. Top with another slice of cheese and the second piece of bread, butter-side up.
- Grill for 3-4 minutes on each side until golden brown, pressing down gently to compact ingredients.
- Remove from skillet, slice in half, and let cheese melt before serving. Enjoy with fresh fruit or a side salad.
Notes
For best results, use medium heat to melt the cheese without burning the bread. Consider adding fresh herbs or vegetables for extra flavor.
