Ingredients
- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup cream (optional)
- 1/2 cup cheese (optional)
- 1/4 cup fresh herbs (parsley, thyme, chopped)
- Sea salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and poke them several times with a fork. Place on a baking sheet lined with parchment paper and bake for 45-60 minutes until tender.
- Once cooled, slice the potatoes in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border of potato intact.
- Add olive oil, garlic, cream, cheese, and herbs to the bowl. Season with salt and pepper, then mix until creamy and well combined.
- Spoon the filling back into the sweet potato skins, mounding it slightly for presentation.
- Return to the oven for an additional 15-20 minutes until heated through and slightly golden on top.
- Garnish and serve warm.
