Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup cream (optional)
  • 1/2 cup cheese (optional)
  • 1/4 cup fresh herbs (parsley, thyme, chopped)
  • Sea salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and poke them several times with a fork. Place on a baking sheet lined with parchment paper and bake for 45-60 minutes until tender.
  2. Once cooled, slice the potatoes in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border of potato intact.
  3. Add olive oil, garlic, cream, cheese, and herbs to the bowl. Season with salt and pepper, then mix until creamy and well combined.
  4. Spoon the filling back into the sweet potato skins, mounding it slightly for presentation.
  5. Return to the oven for an additional 15-20 minutes until heated through and slightly golden on top.
  6. Garnish and serve warm.
