Deliciously stuffed baked potatoes filled with creamy cheese, crispy bacon, and topped with green onions, perfect for a family brunch.

Ingredients

  • 4 large Russet potatoes
  • 1 cup shredded Cheddar cheese
  • 4 slices bacon
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for about 45-60 minutes, until tender.
  4. Cook the bacon until crispy, crumble, and set aside.
  5. Once cool, cut the potatoes in half and scoop out the insides.
  6. Mash the potato flesh with sour cream, half the cheese, bacon, garlic, salt, and pepper.
  7. Fill each potato skin with the mixture, top with remaining cheese and green onions.
  8. Bake for an additional 15-20 minutes until golden and bubbly.
  9. Serve hot with optional garnishes.
