Ingredients
- 4 large Russet potatoes
- 1 cup shredded Cheddar cheese
- 4 slices bacon
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for about 45-60 minutes, until tender.
- Cook the bacon until crispy, crumble, and set aside.
- Once cool, cut the potatoes in half and scoop out the insides.
- Mash the potato flesh with sour cream, half the cheese, bacon, garlic, salt, and pepper.
- Fill each potato skin with the mixture, top with remaining cheese and green onions.
- Bake for an additional 15-20 minutes until golden and bubbly.
- Serve hot with optional garnishes.
Notes
For added flavor, mix in your favorite herbs into the potato filling.
