Ingredients
- 1 lb boneless chicken (breast or thighs)
- 1/2 cup soy sauce
- 1/4 cup honey or brown sugar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 zucchini, chopped
- Bamboo skewers (soaked in water for 30 minutes)
Instructions
- In a bowl, whisk together soy sauce, honey or brown sugar, minced garlic, and ginger. Add a splash of sesame oil.
- Cut chicken into bite-sized chunks and marinate in the mixture for at least 30 minutes, or up to overnight.
- Soak bamboo skewers in water while chicken marinates and chop vegetables into similar-sized pieces.
- Assemble by alternating chicken and vegetables on the skewers.
- Preheat grill to medium heat and grill skewers for about 10-15 minutes, turning occasionally until cooked through.
- Brush with leftover marinade in the last minutes of grilling for extra flavor.
- Garnish with sesame seeds and sliced green onions before serving.
Notes
For a vegetarian option, substitute chicken with tofu or shrimp. Experiment with different vegetables to suit your taste.
