Sweet and savory grilled Teriyaki Chicken Skewers that bring family and friends together around the barbecue.

Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1/2 cup soy sauce
  • 1/4 cup honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 zucchini, chopped
  • Bamboo skewers (soaked in water for 30 minutes)

Instructions

  1. In a bowl, whisk together soy sauce, honey or brown sugar, minced garlic, and ginger. Add a splash of sesame oil.
  2. Cut chicken into bite-sized chunks and marinate in the mixture for at least 30 minutes, or up to overnight.
  3. Soak bamboo skewers in water while chicken marinates and chop vegetables into similar-sized pieces.
  4. Assemble by alternating chicken and vegetables on the skewers.
  5. Preheat grill to medium heat and grill skewers for about 10-15 minutes, turning occasionally until cooked through.
  6. Brush with leftover marinade in the last minutes of grilling for extra flavor.
  7. Garnish with sesame seeds and sliced green onions before serving.

Notes

For a vegetarian option, substitute chicken with tofu or shrimp. Experiment with different vegetables to suit your taste.
