Ingredients
- 1 cup bulgur wheat
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 1 cup tomatoes, diced
- 1 cup cucumbers, diced
- 1/4 cup lemon juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Rinse bulgur under cold water and soak in a bowl with water for 20-30 minutes until softened. Drain any excess water.
- Finely chop fresh parsley and mint, and dice the tomatoes and cucumbers into small pieces.
- In a mixing bowl, combine the soaked bulgur, chopped herbs, tomatoes, and cucumbers. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to mix.
- Allow the salad to rest for 20-30 minutes before serving to let the flavors meld.
- Serve the Tabouli Salad on its own or paired with grilled meats or fish.
