Ingredients
- 2 cups cooked, mashed sweet potato
- 1 cup rolled oats
- 1 egg
- ½ cup natural peanut butter (without added sugars or xylitol)
- 1 tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potato with the rolled oats.
- Add the egg and peanut butter, mixing until well combined.
- Sprinkle in the cinnamon, if desired, and stir to incorporate.
- Pour the mixture into a greased cake pan or muffin tin.
- Bake for about 25-30 minutes, or until the top turns golden brown and a toothpick comes out clean.
- Let it cool before serving. Optionally, top with yogurt or more peanut butter.
Notes
Store leftovers in an airtight container in the refrigerator for up to four days or freeze for later.
