Ingredients
- 2 medium Sweet Potatoes
- 2 cups Rolled Oats
- 1 Egg
- 1/2 cup Peanut Butter
- 1/4 cup Coconut Oil
- 1 teaspoon Cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a cake pan by greasing or lining with parchment paper.
- Boil or roast the sweet potatoes until tender, about 15–20 minutes, then mash them in a bowl.
- Combine the mashed sweet potatoes, oats, peanut butter, egg, and coconut oil in a large mixing bowl, then stir until you have a thick, consistent batter.
- Pour the batter into the prepared cake pan and smooth out the top. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
- Cool completely before serving. Optionally, top with a dollop of peanut butter or Greek yogurt.
