Ingredients

  • 2 medium Sweet Potatoes
  • 2 cups Rolled Oats
  • 1 Egg
  • 1/2 cup Peanut Butter
  • 1/4 cup Coconut Oil
  • 1 teaspoon Cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a cake pan by greasing or lining with parchment paper.
  2. Boil or roast the sweet potatoes until tender, about 15–20 minutes, then mash them in a bowl.
  3. Combine the mashed sweet potatoes, oats, peanut butter, egg, and coconut oil in a large mixing bowl, then stir until you have a thick, consistent batter.
  4. Pour the batter into the prepared cake pan and smooth out the top. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  5. Cool completely before serving. Optionally, top with a dollop of peanut butter or Greek yogurt.
