Ingredients

  • 2 Sweet Potatoes, peeled and chopped
  • 1 cup Blueberries, fresh or frozen
  • 2 cups Whole Wheat Flour (or oat/almond flour)
  • 1 Egg
  • 1/2 cup Peanut Butter (unsweetened, xylitol-free)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the chopped sweet potatoes until tender, about 15-20 minutes. Drain and let cool before mashing.
  3. Combine the mashed sweet potatoes with blueberries in a large bowl.
  4. Stir in whole wheat flour, egg, and peanut butter until well mixed.
  5. Roll the dough into small balls or shape them into chews using your hands or cookie cutters.
  6. Arrange the chews on a baking sheet lined with parchment paper.
  7. Bake for about 25-30 minutes until golden brown and firm to the touch.
  8. Cool completely on a wire rack.
