Ingredients
- 2 Sweet Potatoes, peeled and chopped
- 1 cup Blueberries, fresh or frozen
- 2 cups Whole Wheat Flour (or oat/almond flour)
- 1 Egg
- 1/2 cup Peanut Butter (unsweetened, xylitol-free)
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the chopped sweet potatoes until tender, about 15-20 minutes. Drain and let cool before mashing.
- Combine the mashed sweet potatoes with blueberries in a large bowl.
- Stir in whole wheat flour, egg, and peanut butter until well mixed.
- Roll the dough into small balls or shape them into chews using your hands or cookie cutters.
- Arrange the chews on a baking sheet lined with parchment paper.
- Bake for about 25-30 minutes until golden brown and firm to the touch.
- Cool completely on a wire rack.
Notes
For an added depth of flavor, consider roasting the sweet potatoes. Store chews in an airtight container at room temperature for about a week or refrigerate for up to two weeks.
