Ingredients

  • 4 cups all-purpose flour
  • 1 ½ cups warm water
  • 2 ¼ teaspoons active dry yeast
  • 2 tablespoons sugar or honey
  • ¼ cup olive oil
  • 1 teaspoon salt
  • Fresh herbs (rosemary or thyme) or toppings (sliced fruits like figs or peaches)

Instructions

  1. In a large mixing bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
  2. Add the olive oil, salt, and flour. Mix until a dough forms.
  3. Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 60 minutes or until doubled in size.
  5. Punch down the dough gently and shape it into a rectangle on a baking sheet lined with parchment paper.
  6. Cover again and let it rise for another 30 minutes.
  7. Preheat your oven to 400°F (200°C). Create dimples in the dough with your fingers and drizzle with olive oil. Sprinkle with sea salt and herbs or fruits.
  8. Bake for 20-25 minutes or until golden and cooked through.
  9. Allow to cool slightly before slicing. Serve warm or at room temperature.
