Ingredients

  • 2 cups sugar cookies (store-bought or homemade)
  • 1/2 cup melted butter
  • 16 oz cream cheese (softened)
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream or heavy cream
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, crush your sugar cookies until they resemble fine crumbs. Mix in the melted butter until combined and press the mixture firmly into the bottom of a springform pan.
  3. Bake for about 10 minutes or until lightly golden, then set aside to cool.
  4. In a large mixing bowl, beat the softened cream cheese with sugar until smooth. Incorporate the eggs one at a time, mixing well after each addition. Add vanilla extract and salt, then mix in your sour cream until fully combined.
  5. Pour the cream cheese filling over the cooled crust. Bake for about 50-60 minutes or until the edges are set but the center slightly jiggles.
  6. Allow it to cool in the oven with the door slightly ajar for about an hour, then refrigerate for at least four hours, or overnight.
  7. Once chilled, remove from the springform pan and top with whipped cream or fresh fruit as desired.

Notes

For lighter options, swap some cream cheese for Greek yogurt. Use gluten-free sugar cookies for a gluten-free version.
