Ingredients
- 2 cups sugar cookies (store-bought or homemade)
- 1/2 cup melted butter
- 16 oz cream cheese (softened)
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 cup sour cream or heavy cream
- 1/4 tsp salt
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, crush your sugar cookies until they resemble fine crumbs. Mix in the melted butter until combined and press the mixture firmly into the bottom of a springform pan.
- Bake for about 10 minutes or until lightly golden, then set aside to cool.
- In a large mixing bowl, beat the softened cream cheese with sugar until smooth. Incorporate the eggs one at a time, mixing well after each addition. Add vanilla extract and salt, then mix in your sour cream until fully combined.
- Pour the cream cheese filling over the cooled crust. Bake for about 50-60 minutes or until the edges are set but the center slightly jiggles.
- Allow it to cool in the oven with the door slightly ajar for about an hour, then refrigerate for at least four hours, or overnight.
- Once chilled, remove from the springform pan and top with whipped cream or fresh fruit as desired.
Notes
For lighter options, swap some cream cheese for Greek yogurt. Use gluten-free sugar cookies for a gluten-free version.
