Ingredients
- 2 cups all-purpose flour
- 1 ½ cups sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 4 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
- 16 ounces mascarpone cheese
- 8 ounces white chocolate, melted
- 1 cup heavy cream
- ½ cup powdered sugar
- 2 cups fresh strawberries, sliced
- Optional: grated white chocolate for garnish
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lightly flouring them.
- In a large mixing bowl, beat together the sugar and butter until light and fluffy (3-5 minutes).
- Add in the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking powder, and salt. Alternate adding this mixture and milk to the egg mixture until fully combined.
- Stir in the vanilla extract.
- Pour the batter evenly into the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
- For the mascarpone filling, mix the mascarpone cheese and melted white chocolate until smooth.
- In another bowl, whip the heavy cream with powdered sugar until soft peaks form and gently fold it into the mascarpone-white chocolate mixture.
- Once the cakes are cool, layer one on a serving plate, spread half of the mascarpone filling, and add sliced strawberries. Top with the second layer and spread the remaining filling over the cake.
- Garnish with additional strawberries and grated white chocolate. Chill for an hour before serving.
