Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 16 ounces mascarpone cheese
  • 8 ounces white chocolate, melted
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 2 cups fresh strawberries, sliced
  • Optional: grated white chocolate for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lightly flouring them.
  2. In a large mixing bowl, beat together the sugar and butter until light and fluffy (3-5 minutes).
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking powder, and salt. Alternate adding this mixture and milk to the egg mixture until fully combined.
  5. Stir in the vanilla extract.
  6. Pour the batter evenly into the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks.
  7. For the mascarpone filling, mix the mascarpone cheese and melted white chocolate until smooth.
  8. In another bowl, whip the heavy cream with powdered sugar until soft peaks form and gently fold it into the mascarpone-white chocolate mixture.
  9. Once the cakes are cool, layer one on a serving plate, spread half of the mascarpone filling, and add sliced strawberries. Top with the second layer and spread the remaining filling over the cake.
  10. Garnish with additional strawberries and grated white chocolate. Chill for an hour before serving.
