Ingredients
- 1 cup carob powder
- 2 cups all-purpose flour (or almond flour for gluten-free)
- 1 teaspoon baking soda
- ½ cup unsalted butter (or coconut oil)
- 1 cup coconut sugar (or maple syrup or honey)
- 1 egg (or flaxseed egg)
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together carob powder, flour, baking soda, and spices in a large bowl.
- Combine the butter and sweetener in another bowl and cream until fluffy.
- Add in the egg and mix well.
- Join the dry mixture into the wet ingredients until just combined.
- Chill the dough for 30 minutes in the refrigerator.
- Shape the cookies using a bat-shaped cookie cutter on a floured surface.
- Bake for 10-12 minutes or until edges are crisp.
- Cool on a wire rack and decorate as desired.
Notes
For a vegan option, substitute the egg with a flaxseed egg and the butter with coconut oil.
