Delightful bat-shaped cookies made with carob, perfect for Halloween festivities.

Ingredients

  • 1 cup carob powder
  • 2 cups all-purpose flour (or almond flour for gluten-free)
  • 1 teaspoon baking soda
  • ½ cup unsalted butter (or coconut oil)
  • 1 cup coconut sugar (or maple syrup or honey)
  • 1 egg (or flaxseed egg)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together carob powder, flour, baking soda, and spices in a large bowl.
  3. Combine the butter and sweetener in another bowl and cream until fluffy.
  4. Add in the egg and mix well.
  5. Join the dry mixture into the wet ingredients until just combined.
  6. Chill the dough for 30 minutes in the refrigerator.
  7. Shape the cookies using a bat-shaped cookie cutter on a floured surface.
  8. Bake for 10-12 minutes or until edges are crisp.
  9. Cool on a wire rack and decorate as desired.

Notes

For a vegan option, substitute the egg with a flaxseed egg and the butter with coconut oil.
